ABSTRACT: This study aimed to evaluate the effects of adding probiotic culture (Bifidobacterium animalis subsp. Lactis Bb-12) and prebiotics (fructooligosaccharide - FOS) to yoghurt formulations stored at 4°C for 28 days, using an experimental design (independent variables: (0-3% of FOS and probiotic starter cultures 0-3%). The pH, acidity, fat, syneresis, protein, ºBrix, sugars, FOS and probiotic bacteria count were analyzed. The probiotic- and prebiotic-added yoghurt formulations showed lower acidity, syneresis and glucose than the control yoghurt and compared to formulations containing probiotic and prebiotic separately. Effects of cigarette smoke condensate on the production and characterization of exopolysaccharides by Bifidobacterium Anais da ABC (AABC)

The aim of the study was to investigate the effect of cigarette smoke on the production and characterization of exopolysaccharides (EPSs) produced by Bifidobacterium. Cigarettes of Shanhua brand (nicotine: 1.1 mg, tar: 11 mg) were utilized to prepare a cigarette smoke condensate (CSC). The standard strain of Bifidobacterium animalis was cultured in MRS media under anaerobic addition of CSC. The results showed that CSC significantly decreased the growth of B. animalis as well as EPSs and acetic acid production. Furthermore, two EPSs fractions (Fr-I and Fr-II) were isolated and purified for chemical and molecular determination. The agar RCPB pH5 has been considered a good alternative for counts of Bifidobacterium in yoghurt. However, during the refrigerated storage of yoghurt it is extremely difficult to count this microorganism due to the size of the colonies, which are so small they require the aid of a stereoscope to count them. Another agar, MRS-LP, has been also recommended for counts of Bifidobacterium in the presence of yoghurt bacteria. The purpose of this study was to test the suitability of Transgalactosylated oligosaccharides-mupirocin lithium salt (TOS-MUP) and MRS-clindamycin-ciprofloxacin (MRS-CC) agars, along with several other culture media, for selectively enumerating bifidobacteria and lactic acid bacteria (LAB) species commonly used to make fermented milks. Pure culture suspensions of a total of 13 dairy bacteria strains, belonging to eight species and five genera, were tested for growth capability under various incubation conditions. Influence of fructooligosaccharides on the fermentation profile and viable counts in a symbiotic low fat milk BJM

This study evaluated the effects of prebiotics on fermentation profile and growth of Lactobacillus acidophilus, Lactobacillus bulgaricus, Lactobacillus rhamnosus, and Bifidobacterium lactis in co-cultures with Streptococcus thermophilus. Acidification rate and viability were positively influenced by the co-culture with B. lactis and by both inulin or oligofructose in low fat milk.

Probiotics are defined as microorganisms that promote benefits to host health, mainly by regulating resident microbiota. Disequilibrium in microbiota can favor the growth of opportunist microorganisms and the development of pathologies, like candidosis caused by yeasts of the Candida genus. This work evaluated whether probiotics consumption was able to influence a specific immunological response to Candida and the presence of these yeasts in the oral cavity. Microencapsulation technique appears helpful for more protection of Bifidobacteria against acid inhibitory effect. The effect of medium composition and product inhibitory in free cell culture, as well as the effect of the coating materials in immobilized cells, on biomass growth, acid production and substrate utilization kinetics of Bifidobacterium animalis subsp. lactis Bb 12 in uncontrolled batch fermentation was examined. The Monod and the Luedeking and Piret equations with a product inhibition term involving toxic power terms improved model efficiency for both growth and production. Potencial do soro de leite líquido como agente encapsulante de Bifidobacterium Bb-12 por spray drying: comparação com goma arábica Ciência Rural

O objetivo do trabalho foi avaliar o potencial do soro de leite líquido como agente encapsulante de Bifidobacterium Bb-12 por spray drying, comparando-o com a goma arábica, a qual é tradicionalmente utilizada na tecnologia de microencapsulação. Foram determinados o rendimento da microencapsulação e a viabilidade das microcápsulas durante o armazenamento. Quando o soro de leite foi utilizado como agente encapsulante, o rendimento da microencapsulação foi maior e a viabilidade das células manteve-se elevada e constante durante doze semanas. O soro de leite apresentou-se como um eficiente agente encapsulante de Bifidobacterium por spray drying.

O presente Comunicado Técnico descreve a tecnologia desenvolvida para a produção de um queijo caprino probiótico fresco, de consistência cremosa e sabor suave, com características semelhantes às do queijo tipo Boursin e Fromage Blanc. O produto foi obtido através da adição de culturas comerciais de Bb12 (Chr. Hansen) e La5 (Chr. Hansen), bactérias amplamente estudadas por suas propriedades probióticas.

Properties of Streptococcus thermophilus fermented milk containing variable concentrations of Bifidobacterium longum and Lactobacillus acidophilus BJM

Sensory evaluation and analysis of pH, titratable acidity and microbial counts after 1, 7, 14 and 21 days of storage of five combinations of lyophilized Bifidobacterium longum and/or Lactobacillus acidophilus added to milk fermented with Streptococcus thermophilus were studied during storage at 4ºC. The taste and acidity sensory attributes were significantly (P<0.05) perceived as the storage time increased. Favourite combinations contained, initially, Bif. longum and L. acidophilus (10(8) and 10(7) cfu/mL, respectively) and Bif. longum only (10(8) cfu/mL). To prepare the fermented milk, reconstituted powdered milk and lactic acid starter culture were used. The bioyogurt was evaluated at 0, 7, 14, 21, 28, and 35 days of storage.
